Every housekeeper who raises bread with yeast can certify that the fermentation appears to depend upon the yeast, and that the quantity of yeast is increased in this way. Knowing this uniform mode of action of ferments, whether within or without the body, the explanation of the regular course of the contagious diseases and of the reason why they do not, as a rule, appear but once in the same person, does not seem difficult- to understand.
