One detriment to an exclusive vegetable diet is the lack of flavor, the presence of which would cause better secretions of the digestive enzymes. The extractives or amines of meat excite the flow of gastric juice and pepsin, which are needed to act properly upon proteins.

One may eat slightly less food in summer than in winter on account of less necessity of generating heat, but the difference is slight, as the variation in weight of the clothing and the heating of the houses makes up some of the difference. The chief factor at all times is the amount of exercise. More fat should be taken in winter than in summer, as it is the prime heat producer.
