The acetic acid in the filtrate is exactly neutralised with 2% sodium hydroxide solution ; then a known quantity of 10% sodium hydroxide solution of known strength is added, and the solution is boiled gently under a reflux condenser for half an hour to hydrolyse the triacetin.
