The White Wines of the Medoc generally show from 13 to 14 per cent of alcohol, but as above stated they are short-lived and do not keep well for more than three or four years.

The grapes are first passed through a crusher and then pressed into a Vermorel press or in a hydraulic one. The marc is then removed from the press and passed through a sifter to re- tain any stray pieces of stalk.
