CKEAM OF CELERY SOUP.
After reserving the finest celery for the table, select the coarser or white blades, rejecting the green portions, boil them until very tender, from 1 to II/2 hours, rub through sieve. For every pint of this pulp have ready 3 pts. of veal stock or chicken brotlr boiling hot, add the celery pulp with '1 level teaspoonsful of salt, very little pepper rubbed into li tablespoonsful of butter, let it boil up, add 1 pt. of sweet milk or cream, and when it ag...ain reaches the boiling point — no longer — remove from the tire, not allowing it to boil. This souj) may be prepared the clay before, leaving out the cream or milk, which should be added after the soup is re-heated.
CREAM OF TOMATO SOUP.
To 1 quart can of tomatoes add 1 pint of water, 4 whole cloves, a large slice of onion, 1 tablespoonful sugar, 1 teaspoon- ful salt, a sprig of parsley, and boil all together for '20 minutes.
Heat in a double boiler 1 quart milk, thickened with 2 table- spoonsful Hour rubbed into 1 teaspoonful of butter.
