As the almonds will cling together when given a gum arabic coating, they must be loosened up by shaking the trays. Then let stand until they are thoroughly dry, then pack. By using the confectioners' glaze you do not have to place them in the drying room. They will dry in 2 or 3 hours, and should be put on the almonds cold.
